Collecting sap from trees is the first step in making maple syrup.  The sap flows best when the temperature is below freezing at night and above freezing during the day.  One tree can produce up to 4 gallons of sap in one day!  The season is short, typically from late February or early march and runs thru early - mid April.  Once the trees bud the season is over...

Sap is collected from maple trees in late winter / early spring.  The freshest sap makes the best syrup.  We collect the raw sap and make it into finished syrup on a daily basis during "the season".  Sap flows thru the woods thru tubing under vacuum pressure.  It is an incredible site to witness.

Sap collected from our trees has a sugar content of between 1.75 and 3.25%.   We process and boil the sap until the sugar content reaches 66 - 67% sugar (brix).  That is when it becomes Maple Syrup...It takes roughly 40 gallons of sap to make one gallon of syrup!
